This is fantastic for snoek, but will work perfectly for any linefish you may prefer. Use a non-stick cooking spray for your hinged braai grid.
In a small bowl, mix all ingredients together.
Place butterflied fish on an oiled hinged grid. Season with salt and pepper.
Braai on hot coals for between 20 and 25 minutes or until the skin is crisp and the flesh is just cooked. Remove to a large platter and pour marinade over it.
