Beer keeps the meat moist during cooking and adds a wonderful flavour. The bird is crispy on the outside and succulent on the inside.
Squeeze half a lemon into a small bowl and add the dried herbs, salt and pepper and olive oil. Rub the dried herb mixture onto the inside and outside of the chicken. Insert the fresh herbs and the other half of the lemon into the cavity of the chicken.
