A couple of my favourite ingredients... chicken breast with skin on and feta cheese... to make an easy mid-week meal.
Combine the stuffing ingredients in a small bowl. Push stuffing under the chicken breast skin. Rub the skin with a little olive oil and season. For a more lemon zing, tie lemon slices in place with string that has been soaked in water.
Place the chicken in a tin foil container and braai for 40 to 45 minutes.
