This looks like a strange combination, but I borrowed it from a classic Caesar salad and it is sensational.
Separate cos lettuce leaves. Cut crosswise but not through. Shave the parmesan cheese with a vegetable peeler. In a blender, purée garlic, anchovies and lemon juice. While the motor is running, add olive oil in a stream until emulsified. Season and toss lettuce with the dressing in a bowl. Add half the parmesan and season again. Add the rest of the parmesan shavings on top.
