Traditionally in the south of Brazil, the ribs are only seasoned with rock salt. It is basically a crime if you add anything else to it, as I did on my first recipe. But it’s good to be a little adventurous as well…
Rub the ribs with the rock salt and wrap them in aluminum foil.
Heat the barbecue to low–medium heat. Place the parcel on the barbecue and cook for about 5 hours, turning a couple of times.
Take the ribs from the foil and finish cooking them on the barbecue grill.
Very simple and, as they say, “patience is a virtue”. You will not regret it.
