The whole rump can be used for this recipe as well. If you like, you can also experiment with different cheeses, even creating a “quattro formaggio” tri-tip!

Ingredients

  • 1 tri-tip whole, approximately 2 lb 4 oz (1 kg)
  • oz (150 g) provolone cheese

Method

Using a sharp knife, pierce holes all over the meat.

Cut the cheese into small, long pieces, and using your fingers, stick the cheese inside the meat. Skewer it lengthways and sprinkle with rock salt.

Place the meat on your rotisserie grill and cook for about 30 minutes on medium–high heat. Leave to rest and slice it against the grain.
