The name of this recipe comes from my nickname, “Biro”. There was a soccer player called Biro from the 80s with long curly hair, just like I had at one point in my life…

Ingredients

  • 4 lamb racks (the biggest ones you can get)
  • fl oz (100 ml) extra virgin olive oil

Method

Place the lamb racks on a chopping board, and with a sharp knife start opening them up, close to where the bones are. Very carefully cut the lamb and open the meat. Do not make any holes on the meat.

Using a hand blender, blend the olive oil, red pepper, garlic and rosemary. Pour over the lamb racks and set aside for 1 hour.
