One of my favorites, the pork neck! It goes well with a traditional Portuguese port wine.
Place the whole pork neck on a chopping board and using a sharp knife, score the meat, about ½ in (1 cm) deep, diagonally both ways, creating little squares. Cut the steaks about ¾ in (2 cm) thick, cutting perpendicular to the meat fibre.
To make the marinade, place all the ingredients in a bowl and whisk well.
