This sauce has a very elegant buttery, nutty flavor, and it is absolutely divine with any seafood or fish. Don’t be shy, use it everywhere. When having a barbecue, brush it all over your meats two to three times while it’s cooking.

  • 1 lb 2 oz (500 g) unsalted butter, chopped

Method

To clarify the butter, you will need to use a heavy-bottomed saucepan. Heat the butter in the pan over low heat. The butter will start to melt and the water will evaporate, then a white foam will form on top of the melted butter. This is the milk fats that separate from the butter fat. Using a spoon, skim it off and discard.

Strain the butter using a very thin mesh or muslin cloth.
