Polenta was brought to Brazil by the Italian immigrants at the end of the 19th century, and it has become a big part of Brazilian cuisine. But what the Italians didn’t do, as far as I’m concerned, was deep-fry or grill the polenta. That’s when this dish became traditionally Brazilian. Just make sure it’s nice and crunchy.

  • 21 fl oz (600 ml) water

Method

Bring the water, butter, salt and pepper to the boil in a large pot over medium heat.

Slowly add the polenta, whisking continuously until the mixture thickens. Then add the parmesan. Reduce the heat, cover and leave for 20 minutes.

Place the cooked polenta on a tray to cool. Once it’s cool, cover with plastic wrap and refrigerate. After 3 hours in the refrigerator it should be h
