This is a very traditional recipe from the south of Brazil. It used to be made with dried salty meat, at the end of the 19th century, and that is why it became popular to use the cooked meat from the barbecue from the day before, when the meat is actually dry and salty.
Heat the oil in a large pot (big enough to hold all of the ingredients) over medium heat. Add the onion, garlic, carrot and peppers and sauté.
Add the thinly sliced meat left over from the barbecue and cook for about 5 minutes. Then add the tomato ketchup, asparagus, 1 tablespoon of parsley and 1 tablespoon of the scallions. Mix and cook for a further 5 minutes.
