This traditional New England bread is made with a mixture of white and wholemeal flours and polenta, which is a coarse corn meal. The molasses sweetens the bread and gives it a rich colour.
Pour the water, molasses and lemon juice into the bread machine pan. If the instructions for your machine specify that the yeast is to be placed in the pan first, reverse the order in which you add the liquid and dry ingredients.
