This recipe brings together two traditional American breads — corn bread and bubble loaf. It has the flavour of corn and is spiked with hot chilli. Chunks or “bubbles” of bread can easily be pulled from the bread for easy eating.
Pour the milk and water into the bread pan. Add the egg. Reverse the order in which you add the liquid and dry ingredients, if necessary. Sprinkle over the flour and corn meal, covering the liquid. Add the sugar and salt in separate corners. Make a small indent in the flour; add the yeast.
