Ingredients

1½- or 2-Pound-Loaf Machines

  • ½ pound fresh spinach, washed
  • 3 large eggs, lightly beaten, at room temperature

Method

  1. Place the spinach in a food processor fitted with the metal blade. Process to a puree. Remove the spinach and place in a small mesh strainer over a small bowl. Press out 2 to 3 tablespoons spinach juice. Reserve 3 tablespoons spinach puree.
