You can vary the flavor of this traditional Italian bread by using Asiago cheese, the poor man’s Parmesan, or the genuino Romano sheep’s milk cheese, Locatelli, a favorite of native Italians. Both are hard grating cheeses. Be prepared for this bread to rise very high in the pan during the last rise before baking. It is a great picnic bread eaten out of hand with cold meats and fruit.
