Albert Kumin’s Kaiser Rolls

Every day thousands of New Yorkers stop at delis and coffee carts on their way to work and pick up ‘a buttered roll and a coffee, regular’ - a Kaiser roll split and thickly spread with butter and a coffee with milk and sugar added. My teacher Albert Kumin recently shared this recipe with me, of which 300 dozen or so rolls were prepared daily for Windows on the World and the many restaurants and other food outlets in the World Trade Center.
