Spread the Russian dressing on both slices of the bread and top with the corned beef, coleslaw and cheese, in that order. Cover with the second slice of bread, dressing side down.
For the best results for the corned beef, cook a thick-cut corned brisket and let it cool to room temperature. The cheese is widely available, but most deli-counter people know it as Emmental.
