With a little practice and a good-quality nonstick pan, making omelets can become a morning ritual. Start simply with a good melting cheese and maybe some chopped fresh herbs. This Greek-style omelet with mushrooms, spinach, and feta is a favorite. To change it up, add chopped, crisp-cooked bacon or swap out the feta for shredded Cheddar or crumbled goat cheese.
