These irresistible, crisp-edged potato pancakes are traditionally paired with sour cream and applesauce. For a heartier version, top the latkes with a poached egg. They’re also delicious garnished with creme fraîche or sour cream, smoked salmon, and chopped chives.

Ingredients

  • 2 lb (1 kg) russet potatoes, peeled
  • ½ yellow onion, grated

Method

Preheat the oven to 250°F (120°C).

Shred the potatoes on the coarsest holes of a box grater. Enclose half of the grated potatoes in a kitchen towel and twist the towel to press out as much liquid as possible. Transfer to a large bowl. Repeat with the remaining grated potatoes.
