These light, cakey muffins contain bursts of fresh raspberries and tangy lemon zest, all topped with a crunchy sweet streusel. To change it up, swap out the raspberries for blueberries and add orange zest instead of lemon.
To make the streusel, in a medium bowl, stir together the melted butter and vanilla. In another bowl, combine the flour, sugar, and salt and stir together with a fork. Add the butter mixture and stir until evenly blended and crumbly. Set aside.
