  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp finely grated lemon zest

Method

In the top of a double boiler, combine the eggs, egg yolks, lemon juice, sugar, and butter. Place over but not touching gently simmering water and whisk steadily until the sugar dissolves and the butter melts. Continue to whisk until the curd coats the back of a spoon, about 8 minutes. Do not let the curd boil.
