This spicy, sweet, and savory jam is a scrumptious companion for beignets, burgers, and bruschetta. We also love it spread inside a grilled cheese sandwich—like having your grilled cheese and tomato soup all in one!

  • 2 pounds roma or plum tomatoes (about 8 tomatoes)

Method

  1. Bring a large pot of water to a gentle boil. Cut an x-shaped slit in the bottom of each tomato. Boil tomatoes for 30 seconds. Remove with a slotted spoon and place immediately in a bowl of ice water to stop cooking. When cool to touch, the skins will peel and coarsely chop tomatoes, reserving juices.
