Sima, or ‘spring mead’, is a spritzy Finnish booze, traditionally supped on 1 May during the Vappu festival, a nationwide street celebration to mark the joyful arrival of spring and the passing of winter. It’s an absolute breeze to make and is ingenious to boot; the inclusion of raisins not only adds depth to the flavour, but they also serve as an indication of the drink’s readiness, rising to the surface* when it’s ready for quaffing.
