The flower of the common hawthorn does most of its blooming in May. And round our way* there’s no blossom more abundant than the mayflower. So no one really notices when we deprive the hedgerows of a bagful of hawthorn branches for a brandy maceration. The mild flavour of the mayflower somehow manages to enhance the brandy’s fruitiness with additional floral, savoury notes.
