La Buenaventura
Boiler House Food Hall

This simple mayonnaise-alternative is just as delicious as a classic garlic mayonnaise but completely egg free. Serve it with any rice dish or as a dipping sauce - La Buenaventura serve it with their mushroom, pistachio and pine nut rice. It does have a tendency to split, so make sure you add the sunflower oil very slowly and stop adding it as soon as the mixture emulsifies.

  • 3 garlic cloves
  • 50 ml soy milk
  • 1 teaspoon lemon juice
  • 125 ml sunflower oil
  • salt, to taste

Put the garlic cloves and soy milk in the blender cup and mix with your hand blender until creamy. Add the lemon juice and salt to taste and continue blending. Very slowly add the sunflower oil as you keep the blender running - you really need to keep an eye on things as you’re doing this. As soon as the veganaisse comes together and emulsifies, turn off the blender and stop adding the oil - you may not need it all.
