Herring roes, soft roes or milts, are normally sold, frozen or thawed, but are sometimes available fresh during the spring and early summer. Treat frozen ones correctly and no one will know the difference.

Ingredients

  • 450–500 g (about 1 lb) herring soft roes

Method

  1. Pat the roes dry on kitchen paper. Heat a knob of butter in a large (or two smaller) non-stick frying pan(s). Season the roes and flour lightly, shaking off excess. Add to the pan and cook over a medium heat on both sides until the roes turn golden brown and curl up.
