Samphire is available along our coastline during the summer months. It is delicious with simply cooked fish, as it has a naturally salty taste of the sea.

Ingredients

  • 65 g ( oz) butter
  • 4 salmon fillets, each about 150–16

Method

  1. Preheat the oven to 200°C (fan oven 180°C), gas mark 6 and rub a baking dish with a little of the butter. Meanwhile, check over the salmon and remove any small pin bones with tweezers.
