Traditional accompaniments, such as crunchy parsnip chips and bread sauce, and seasonal vegetables are the ideal partners for roast poultry and game.
Nowadays we seem to be rearing better free-range and corn-fed poultry, which cost more than their battery-reared cousins, but taste far superior. Of course, final flavour is down to the cooking, and a well seasoned bird is a good starting point. A good homemade stuffing will also enhance the flavour – of roast chicken and turkey in particular.
