  • 1 kg ( lb) joint of salted silverside or brisket
  • 4 small onions, peeled

Method

  1. Soak the joint of salt beef in cold water to cover overnight to remove the excess salt.
  2. The next day, drain the meat and rinse in cold water, then put into a large saucepan with the onions, carrots, cloves, black peppercorns, mace blades, bay leaf and thyme sprigs. Add enough water to cover the beef by about 6
