Marsh samphire, or sea asparagus, can be found on the salt marshes around the coast during the summer months. It has a natural salty taste of the sea, which makes it a perfect accompaniment for fish.

Ingredients

  • 300–400 g (11–14 oz) samphire, woody stalks trimmed
  • melted butter (as much as you like)
  • freshly ground b

Method

  1. Cook the samphire in boiling unsalted water (or steam it if you prefer) for 2–3 minutes until tender. Drain thoroughly in a colander.
  2. Toss the samphire with melted butter and black pepper to taste, then serve straightaway.
