Bacon and spring onions give peas a new lease of life. Use fresh peas when they are in season – you’ll need about 1kg (2¼ lb) peas in the pod to give this shelled weight.
Cut the bacon into 1 cm (½ inch) dice. Melt 25g (1oz) butter in a pan and gently cook the bacon over a low heat for 3–4 minutes without allowing it to colour.
