Choosing a potato with a good flavour and texture for mashing can be difficult with so many varieties available, but King Edward is a good all-rounder. A potato ricer is an invaluable tool, as it gets the potatoes nice and fine before you add the butter.

Ingredients

  • 1 kg ( lb) floury potatoes, peeled and quartered

Method

  1. Put the potatoes in a saucepan, cover with cold water and add salt. Bring to the boil and simmer for about 15 minutes until tender. Drain the potatoes and return to the pan over a low heat for a minute or so to dry out.
