This summer dessert is so easy, especially if you make the meringue in advance, or cheat by buying about 125g (4 oz) good quality ready-made meringue. Try it with different berries during the summer months.

  1. To make the meringue, in a clean bowl, whisk the egg white until stiff, then gradually whisk in the caster sugar until the meringue holds firm peaks when the whisk is lifted (use an electric mixer for best results).
