Cucumber sandwiches are classic afternoon tea fare, first served with tea when it became a fashionable drink in the early 1800s. Freshly baked bread is a good starting point and naturally, good farmhouse butter.

Ingredients

  • ½ cucumber
  • 8 slices of wholemeal or light caraway bread

Method

  1. Halve, deseed and thinly slice the cucumber, but don’t peel it. Scatter the shoes on a tray, season lightly with fine sea salt and leave for 10 minutes. As the salt draws moisture out, so it concentrates the flavour of the cucumber. Pat the slices dry with kitchen paper.
