Whitebait are usually sold frozen or recently defrosted and rarely fresh, as they are so perishable. As a young man, working in a pub kitchen in West Bay, I was brought whitebait freshly landed by local fishermen, which I ended up freezing anyway. We’ve come to live with frozen whitebait, and they still make a perfect comforting starter and snack.
