Pumpkins and squashes are underused in the kitchen, perhaps because of their relationship with the ‘old-fashioned’ marrow, or their unusual shape that can make them seem daunting to tackle. There are hundreds of varieties and butternut squash is probably the most consistent of all; it has a deep orange flesh and is a manageable size for domestic use.
