Mushrooms on toast is one of the simplest of luxuries and, if you can get your hands on wild mushrooms like St George’s, the treat will be most welcomed by any house guest. Try to avoid washing wild mushrooms, unless it is absolutely necessary, as they tend to soak up the water like a sponge and you will end up with a pan full of water when you try to sauté them. Instead, brush or wipe off any soil, grit, etc.
