Cow Heel and Black Peas

This recipe is from some friends of mine, Annette and Barry Broadhurst. They serve this and tripe at their annual festive bash, which happens between Christmas and New Year, along with the usual festive goodies, and it’s quite delicious. The trickiest part of the dish is finding the black peas, also known as maple peas or carlings, which are more traditionally eaten at Easter, rather like pease pudding.
