Apple Sauce

In the Middle Ages, it was believed that an animal should be cooked and/or served with something that it fed on, so, as pigs are extremely fond of windfall apples, the association between sharp fruit and sweet meat was probably very early. Apple sauce was also served with goose, roast duck and game dishes. Slow-roasted duck, cooked until so well done that it’s falling off the bone, eats beautifully with a cinnamon-flavoured apple sauce. (Similar matchings of meat and accompaniment, traditio
