Macaroni, originally known as ‘macrows’, was introduced to Britain from Italy in the fourteenth century. It was not until the eighteenth century, though, that the idea of toasted grated cheese was allied with vegetables and, by extension, macaroni. The macaroni was boiled, then drained and tossed in cream before being sprinkled with cheese and browned. It became a very popular supper dish in Victorian times – and is still delicious.
