Cheddar cheese is a great British classic, the ultimate British farmhouse cheese. It was made in and around Somerset, and was the cheese tourists ate when they visited the Cheddar Gorge – so the name stuck. It was a farmer publishing an account of how his wife made her cheese in the mid nineteenth century that brought Cheddar cheese to the world. The word spread, and his children took the recipe and the name to Denmark, Canada, Ireland, Scotland and Australia.
