This omelette has its own history. Arnold Bennett, the famous novelist and theatre critic, was a frequent visitor to the Savoy Hotel Grill. In his great hotel novel Imperial Palace, published in 1930, Bennett based his fictional chef, Roho, on Jean-Baptiste Virlogeux, then chef de cuisine at the Savoy Grill. In tribute, Virlogeux created this omelette, and Bennett is said to have ordered it on each and every visit to the restaurant. The dish itself has since b
