  • 300 g (10 oz) mushrooms, stalks trimmed and wiped clean
  • 2 tablespoons olive oil

Method

Mushrooms always tend to soak up the fat used for frying. For this recipe, the butter has been doubled to account for the soaking.

Heat a large frying-pan with the olive oil. With the oil on the point of smoking, add the mushrooms. These can now be seasoned with salt and pepper and left for a few minutes, before turning them in the pan. Continue to cook, adding the butter. As this heats
