Parsnips can be prepared like mashed potato, that is, boiled, and then mashed with butter and cream. Boiling alone just gives a watery taste with the real depth and flavour of the vegetable lost. So here’s a method that will retain the natural flavour of the parsnip.

Serve these creamed parsnips as a vegetable accompaniment, but they can also be eaten in other ways. I use them in Steamed and Braised Mallard with a Parsnip Tart and they can a
