Baby leeks are the young, thin variety, which also carry the name ‘pencil’ leeks. Eating them grilled gives the young leeks quite a sweet flavour and a slightly bitter edge.
Before grilling, the leeks need to be pre-cooked in boiling salted water. This will tenderize the texture prior to cooking under a hot grill. If you are serving them as a vegetable accompaniment, 2–3 leeks per portion will be plenty.
