Not only did the potato became a staple food in Ireland, but cabbage did as well, and they were combined to make colcannon, a dish traditionally served at Hallowe’en. Often the mix would contain four symbols – a gold band for marriage, a sixpence for wealth, a thimble to indicate spinsterhood and a button for bachelorhood. Champ is another similar dish served at Hallowe’en, a much more buttery mixture of mashed potatoes and greenery, usually spring onions.
