The Dover sole picked up the ‘Dover’ part of its name many years ago, as it was caught in abundance in the Channel and landed at Dover, the main port of supply for London. The fish actually ranges from the Mediterranean to the north of Scotland. Today the best fish are found in the North Sea and Bay of Biscay. The fish’s Latin name, Solea, is from the Greek, and the Greeks thought the shape of the fish would make a perfect sandal for an ocean nymph!
