No, they’re not chicken livers, they’re prunes. The ‘devil’ has nothing really to do with being the opposite of ‘angel’, but is a reference to the ‘devil’ flavour, denoting the dish has been seasoned with mustard, cayenne and/or Worcestershire sauce. It’s the spice that is the devil.

The prunes are stoned and stuffed before being wrapped in the bacon. The stone can be replaced either with a roasted and skinned almond, or with a little chutney. The almond will give you a cleaner job,
