Liver and kidneys together are always a pleasure to eat. This dish is a favourite with offal-lovers, the kidney roasted on top of the stove with a nugget of rosemary butter melting inside, the liver steak pan-fried and served on the red-wine carrots, topped with pan-fried spring onions. All of these ingredients give very fresh flavours.

The kidney is being presented on a roast potato disc. These are very easy to make and everybody enjoys roast potatoes.
