This is also known as Manchester Pudding. It is another combination of custard ingredients and breadcrumbs and, significantly, Mrs Beeton calls it Queen of Bread Puddings. You could use breadcrumbs as here, or some vanilla sponge and jam, which is a delicious variation. What you can’t do without, though, is the meringue topping. This is a really sweet pudding, the one you want to eat plenty of but quite often regret afterwards.
